Brunch is this magical thing where everything good joins forces to make your day – hell, maybe your entire weekend – a success. Even after the most brutal of Saturday nights, a Sunday brunch can be all it takes to feel good enough to tackle all of your weekend errands in a single afternoon.
So for the mornings you’re hosting friends at your place (or maybe just need to brunch alone – no judgement), I give you this light, refreshing take on the classic mimosa. The mango and blood orange juices are both packed with Vitamin C (among others) to help kick any lingering hangovers to the curb, too.
- 1 bottle of Prosecco
- 1 bottle of fresh mango juice
- 3 blood oranges – for juice and slicing for garnish
- Handful of mint, for garnish
In a large pitcher, mix the Prosecco with the mango juice until combined. Add the juice of 2 blood oranges. Slice the remaining orange and add to the pitcher, saving a few for individual glasses. Tear apart mint and add to the pitcher for garnish.
